Just Desserts



My Grandmother's birthday is March 12, she left us years ago, and I thought I'd pay tribute to one of the many desserts she made that I loved. One of my fondest memories growing up was visiting my Grandmother, she would always whip up my favorite dessert back then, tapioca pudding. When she didn't have time to soak the tapioca she made the Minute Tapioca, topped with her homemade whipped cream. She knew I loved tapioca and made sure to make it whenever my mother and I visited her.

Tapioca Pudding

Servings:  4
Ingredients:
1/3 cup sugar
3 tablespoons Minute Tapioca
2 ¾ cups milk
1 egg, beaten
1 teaspoon vanilla extract
Directions:
1.       Mix sugar, tapioca, milk and egg in a saucepan, let set for 5 minutes.
2.       Cook on medium heat, stirring constantly, till mixture comes to a full boil.
3.       Remove from heat, then stir in vanilla.
4.       Cool 20 minutes, then stir.
5.       Serve warm or cold,
Top it off with whipped cream and a maraschino cherry, just like Grandma’s.

Just when Andrea Elliot thought life was getting back to normal after the divorce, her ex, Daren is moving back home.   3. Oh, thanks for sharing this. I love tapioca pudding. My mother and grandmother were fabulous southern cooks. They always seemed to be able to make anything at a moment's notice from the contents of the kitchen. When I was little, my mother owned a restaurant. Everyday she made scrumptious pies-- coconut, lemon, etc. People would have coffee and pie for breakfast and return at lunch for another slice.

  6. Love tapioca also...we weren't very big on making desserts growing up, dessert for us was having pan dulce from the local baker (I grew up in Mexico and bakers can make some yummy sweet breads)!

  8. I love tapioca pudding now,if only to annoy my father's ghost. When we were growing up we weren't allowed to have it...ever. My father loved most everything (even ate a sheep's eye at a North African banquet) but he drew the line at tapioca. So thanks for the memory (take that, Dad!). Meredith

  11. That's a sweet tribute, Carolyn. Tapioca is like rice pudding, right? My mom made it for us once and I think I was the only one that liked it, lol. But growing up my mom made cornmeal porridge with cinnamon for us a lot and I still make it today :)

  12. This ranks very high on my list of comfort foods. Whenever I was sick, Mom fed me cream of wheat or malt-o-meal, which settled my stomach and still does, and tapioca pudding, which is rich in protein. I miss her, but I still feel the love when I taste warm pudding on a cold day.
